Black Bean Salsa

Black Bean Salsa (adapted from Nordstrom Entertaining At Home Cookbook )


1 1/2 cups frozen corn
2 cans (14 oz. ea.) black beans, rinsed and drained
1/3 cup fresh lime juice
1/3 cup canola oil
1/4 cup minced red onion
1/4 cup minced green onion
1 1/2 tsp. cumin
1 1/2 Tbsp. Cajun seasoning
1 cup chopped tomatoes
1/2 cup chopped fresh cilantro
black pepper
1-2 avacadoes, diced

chips


Combine all ingredients but avacadoes. Cover and refrigerate until ready to serve (1-2 hours at least). Gently fold in avacadoes right before serving. Serve with chips.



I think there were catchier names

In fact, I'm sure of it. There had to have been. I have a list of about 20 possible names for this blog. But I kept coming back to this one.

See, a loooooong time ago, when I first started dating my husband D (name withheld because I think you are supposed to do that in blogs) he found a notebook of mine. I carried it around with me in my college backpack. It was a notebook of lists.

Yes, I was (am) that weird. Don't judge.

I'm not always very creative. In fact, I tend to be pretty matter-of-fact. I can come up with some pretty interesting ideas, but usually ... I'm pretty simple. Especially in the beginning of my creative process.

Anyway, back to the notebook. D found it and took a peak. Shame on you D! Inside it he found all kinds of list -- lists for classes I needed to take, grocery/supply lists, to-do lists, and most amusing to him, the "makeup that has worked for me" list.

Sigh.

I am a free sample-aholic. I buy makeup from here and here. But only if they offer a free sample at the time of purchase. So I HAD to have a place to record the products I liked best. My memory just wasn't (still isn't) that good. So I created a pathetically-named list. And my husband still makes fun of me.

He thinks it was cute. I think he exploited me.

And because of him I now have a badly-named recipe blog. But it makes me smile.
